Dear Daniel,

There are many options for activities of those kinds in Tokyo, what are you looking to do exactly? do you want to see a show? or dress up? or museum? I'll list here a few of some easy and great well-known options.

Ninja:
As for Ninja experience in Tokyo, I can't recommend any place better than the Musashi Ninja:

here you will find Ninja History, because they are real descendants from the Musashi clan. A little bit of a museum with real Ninja artifatcs.. You will also find a Ninja training experience and a Ninja show.
It is super fun and I can't recommend it enough.


Geisha:
As for Gueisha experience in Tokyo, it is less common, because Geisha are more traditional from Kyoto.
But you can visit the geisha district right behind the Senso-Ji temple. If you take one of those Rikshaw, they will take you there. You can also find geisha experiences such as tea ceremony and dance presentation in Tokyo as well if you look for it on google.
You can dress up as a gueisha or samurai in Asakusa and walk around the old district too, it is a very nice experience:

Samurai:
As I mentioned above, you can dress up as a samurai in Asakusa, wear a real Katana and everything. But there's also the amazing Samurai Museum in Shinjuku

Sumo wrestling:
Sumo wrestling is very traditional in Tokyo. The reagion you are looking for is called Ryogoku:

ou can see the sumo wrlestlers walking around in Ryogoku, the sumo district in Tokyo. You can also visit a sumo stable in the morning (and you should, it is super recommended) free of charge, you just need to reserve:

And if you go in the right time of th eyear, you can go to the Kokugikan to watch a sumo wrestling tournment in Tokyo:
