Cruising on the Diamond Princess, arriving at 8am, departing at 6pm. I would like to travel to Kakunodate for the day, travelling on the shinkansen. Is this possible? Do I have to pre book a ticket on the shinkansen? Any information you can give me would be appreciated

Do you mean you’re arriving in Tokyo and want to go to Akita as a day trip? I don’t think that’s possible, it’s a 3 hour Shinkansen trip each way, not to mention the time it’ll take you to get from the port to the Shinkansen station. And it’ll take you probably 30 min. to an hour to disembark, and I assume you’d have to be back on the ship an hour or 30 min. before your ship leaves.
If you’re arriving somewhere that’s closer to Kakunodate that makes it logistically possible to get there and back, then you’ll need to prebook Shinkansen tickets as all the seats are by reservation only. Of course, you can go to the ticket office and see if there are tickets left on that day too.
