I am planning to go to Kawagoe next weekend on Saturday with my friend, what is there to do and how should we spend our day there? What is the easiest way to get there from Tokyo?

When going to Kawagoe, Saitama from Tokyo you will have to go there from Ikebukuro Station and take the Tobu Tojo express or semi express train to get there this will take about 35 minutes. Once at the station take the exit on your right. There you will find the malls, the shopping street and behind that the town of little Edo or Koedo.
Koedo is famous for its historical buildings and has many cute little shops and restaurants, Kawagoe is famous for its sweet potato so definitely try these out or some sweet potato ice cream. Close to the main street you can also find the bell tower, the symbol of Kawagoe. When you're in the area I also recommend visiting candy alley with its many tiny shops selling Japanese cakes and sweets. Furthermore there is Kawagoe castle and the Kawagoe Hikawa shrine that you can visit.
If you want to make it yourself more easy and learn a lot more about Kawagoe you might want to hire a guide.
A guide is a great help bringing you to the right places and providing you with interesting information about Kawagoe. This Planetyze website has some interesting recommendations I think:
